
A favorite dish all year round is Moors and Christians
made from black beans and rice. The name refers to the African (black
beans) and Spanish Christian (white rice) roots of Cuban culture
and cooking (Moros Y Christianos).
INGREDIENTS:
- 1 pound black beans, dried (or 1 23-32 oz canned black beans)
- 2 cups cooked rice
- 3 stalks of celery chopped
- 1½ cups chopped fresh cilantro
- ¼ cup fresh squeezed lime juice
- ¾ cup olive oil
- ½ cup chopped onion
- 2 cloves garlic chopped
- salt and pepper to taste
PREPARATION:
In a bowl mix beans, rice, celery, and Cilantro.
Place lime juice in small bowl and whisk in olive oil. Add onion
and garlic and then toss with beans. Add salt and pepper. |
