
Taken on picnics to rave reviews. Serves 6 to 8.
INGREDIENTS:
- noodles from 2 packages chicken-flavor Ramen Noodles, crushed
- ½ cup sliced almonds
- 2 tablespoons sesame seeds
- 1 large head napa cabbage
- 1 small onion, chopped
- Slaw Vinaigrette (below)
PREPERATION:
Spread the noodles from the Ramen Noodle packages with the almonds
and sesame seeds on a shallow baking sheet. Toast under the broiler
just until light brown, tossing occasionally. Cool slightly.
Slice the cabbage crosswise ½ inch thick. Combine with the
noodle mixture and onion in a salad bowl and toss to mix well. Add
the hot Slaw Vinaigrette and toss to mix.
SLAW VINAIGRETTE
- seasoning packets from 2 packages chicken-flavor Ramen Noodles
- 1 cup vegetable oil
- 6 tablespoons apple cider vinegar
- ½ cup sugar
- salt and pepper to taste
Combine the seasoning packets from the noodle
packages with the vegetable oil, vinegar, sugar, salt and pepper
in a small saucepan and bring to a boil.
